Viki Defferding earned a B.A. from the University of Oregon in Spanish and education. She went on to earn an M.A. at Portland State University in Spanish literature, with special emphasis in Mesoamerican Pre-Hispanic cultures and literatures. Viki has spent time touring Spain, Portugal, Costa Rica, Puerto Rico, Honduras, Nicaragua, Peru, and Bolivia, and has traveled extensively all over Mexico. Each summer, she works with missions from her church or Mexican Medical Missions. In the fall of 2004, she received the Outstanding Teacher of the Year Award (post-secondary level) from the Confederation of Oregon for Language Teaching. She has been a professor at George Fox University since 1989.
